My son ever has the best summer vacation! He's going to the beach, sailing with his friends, lots of library time .. I can't even remember the last time I read something that was just for fun. The problem I have is making sure we both are fed during the day. I can't let him go for a couple of hours, knowing that his stomach is running out. Then there are the times when I feed him and later realize that I have not eaten anything. Yikes! Solution: Fiber One Bars.

Fiber One Protein Bars at Walmart

I was at Walmart and hit the grain aisle to pick up some Fiber One bars. They have different kinds, depending on your needs. If you stand up for a snack moment, want to pamper you or need a boost of protein energy, Fiber One has you covered. Coconut almond is my favorite, but I also picked up some cheesecake bars for when I needed something sweet. No, I'm not cute enough. 😉 PS: They also sell them in Mega and Value Packs.

Fiber One Bars are individually wrapped. They help you stay ahead of the curve to have a "sneak accident." You can put them in your purse and forget about them for days, and they will still taste good. Unlike the banana, you left in there and needed to ship to the dry cleaners. Been there. Done it! Add an apple or a handful of almonds and you won't find yourself (or your little one) roaming through the closet for something to eat – stale bagels, greasy pizza. I always feel terrible when it happens. Then again, what mom has NOT experienced it before?

ingredients

  • Fiber One Bar
  • peanut butter
  • 1 apple slice
  • cocoa powder
  • 2 mini chocolate chips
  • pretzels
  • Salad

Instructions

  • Add peanut butter to a Fiber One Bar and fill it with an apple slice.
  • Put in the freezer for 5 minutes.
  • Meanwhile, add cocoa powder to half a teaspoon of peanut butter and form a small ball.
  • Add the ball in front of the end of the apple slice.
  • Add pretzels on top of the ball.
  • Add eyes.
  • Return to the freezer for another 5 minutes.
  • Garnish the plate with salad.
  • Enjoy!
