Ingredients

  • 1/2 recipe for Buffalo chicken bites (boneless chicken wings)
  • 1 head romaine lettuce, chopped
  • 1/2 c grated carrots
  • 1/2 c grated red cabbage
  • 2 celery stalks, thinly sliced
  • 1/3 c crumbled blue cheese
  • 1 avocado, diced
  • 1/2 English cucumber, diced

Simple red wine vinaigrette

Instructions

  • Prepare the buffalo boneless chicken bites. Follow the recipe here, but cut the serving size in half.
  • While the chicken bites are browning, prepare the base of the salad. Combine romaine lettuce, carrots, cabbage, celery, and blue cheese in large bowl.

  • Combine red wine vinegar, extra virgin olive oil, salt, and pepper in a glass measuring cup or small bowl. Beat until emulsified. Pour half of the vinaigrette over the base of the salad and stir.

  • Place the diced avocado, diced cucumber, and boneless chicken bites on the base of the salad. Serve immediately with additional dressing on the side.
