Buffalo Cheese Chicken Sauce Recipe

Not too long ago, we shared our thoughts on buffalo chicken-inspired pizza and buffalo chicken stuffed shells for families. We've even shared how to make three-ingredient homemade chicken wing sauce. They were (and still are) a great success. Fortunately, we've found another good excuse to enjoy buffalo chicken: this cheesy buffalo chicken sauce recipe.

How to make chicken sauce inspired by Buffalo chicken wings

This is slightly different than many of the buffalo chicken sauces shared on other websites. Other recipes are for a thicker sauce made from a large amount of cream cheese, cheddar cheese, diced chicken, and blue cheese or ranch dressing. Instead we love this creamy and cheesy fondue sauce.

How to Make Buffalo Chicken Sauce

The base of our dip is actually a version of Béchamel sauce, which basically means a sauce made from thickened milk with a mixture of butter and cooked flour. We use a similar sauce when making our macaroni and cheese recipe.

Make the creamy sauce

Onion, celery, and lots of cheese are added to the sauce – we use a combination of cream cheese and strong cheddar cheese. Then we add a generous amount of hot sauce and a little shredded chicken.

By the way, if you want to read the steps for the recipe, you can leave the chicken out. Technically, it won't be a buffalo "chicken" sauce, but it still tastes amazing and works perfectly with crispy vegetables, french fries, or even chicken strips on the side.

After tasting the spicy flavor, pour the sauce into a baking dish, cover with a little more cheese, and roast until bubbly and golden.

Buffalo Cheese Chicken Sauce Recipe

This creamy buffalo cheese sauce with cheese is perfect when served alongside crispy celery sticks and tortilla chips. We like to use Frank's Red Hot Original hot sauce for this, as it's full of flavor, but not too spicy. Feel free to experiment with your favorite hot sauce, just keep in mind that the one you choose may be hotter than Franks, so be sure to try it while adding it to the sauce.

We should mention that this sauce is just as good without chicken. We have done it both ways and we believe that you and your friends will love both options. So, if you want to save some dough or have more filling spreads (chicken tender?), Skip the chicken.

Makes 8 servings

Will need

Chicken

2 teaspoons of extra virgin olive oil

1 pound boneless, skinless chicken thighs or substitute chicken breasts

Salt and freshly ground black pepper

Buffalo Dip

2 cups of milk, 2% or whole is best

4 tablespoons unsalted butter

1 cup finely chopped onion (1 medium onion)

1/2 cup celery, finely chopped (1 celery stalk)

2 cloves of garlic

4 tablespoons all-purpose flour

3 ounces cream cheese

8 ounces coarse shredded, sharp white cheddar cheese (2 cups)

Worcestershire Dash Sauce

5 tablespoons Franks Red Hot Original hot sauce, or more to taste

Celery and / or tortilla chips to serve

  • Cooking chicken
  • Heat olive oil in large nonstick skillet with lid over medium-high heat. When the oil is hot and appears shiny, add the chicken. Cook until bottom is browned, about 3 minutes.

    Turn over, reduce heat to low, then cover with lid. Cook until an instant-read thermometer reads 165º F when inserted into the thickest part of the thigh or breast, 10 to 15 minutes. When the chicken is cold enough to handle, use two forks to shred the chicken, then set it aside.

    • Make sauce
    • Heat the milk in a medium saucepan over medium heat until simmering. Turn off the heat and set aside. (Or heat in a microwave-safe container.)

      Melt butter in large heavy-bottomed saucepan over medium heat. Add onion, celery, and 1/4 teaspoon of salt. Cook until onions and celery soften, about 5 minutes.

      Add the garlic and flour. Cook, while whisking constantly, until flour turns light brown, about 3 minutes. Remove from the fire. While constantly whisking, slowly pour hot milk into flour mixture. Continue beating until smooth. At first it will thicken and then thin.

      Return the saucepan to medium heat and while whisking constantly cook until the mixture thickens enough to cover the back of a spoon, about 2 minutes. Remove from the fire.

      Add cream cheese and everything but a handful of cheddar cheese until melted and smooth. Add a pinch of Worcestershire sauce and 5 tablespoons of hot sauce. Try the sauce for seasoning and flavoring, then adjust with additional hot sauce and salt. Add the shredded chicken.

      • Place a rack 6 inches from the grill and heat over high heat.

        Pour sauce into 2-quart baking dish, then top with remaining cheddar cheese. Place the baking dish on a foil-lined baking sheet, then broil the sauce until the top is bubbling and the cheese begins to brown. Serve with tortilla chips and celery sticks.

Adam and Joanne's advice

  • Advance: You can prepare the buffalo chicken sauce 2 to 3 days in advance. Follow the directions in our recipe to prepare the buffalo chicken until it's time to transfer it to a baking dish. Store the covered sauce in the refrigerator until ready to serve. Reheat the sauce in a saucepan over medium heat until completely hot. Pour sauce into baking dish, add extra cheese on top and grill until top is bubbling and cheese begins to brown. (Keep the following in mind when you go ahead: FoodSafety.gov says cooked chicken is refrigerated safely 3-4 days.)
