So you had to know this was going to happen, right? I mean, come on! You should have seen it coming a million miles away. You must have seen the writing on the wall. The signs were so obvious, so blatantly obvious. You should be completely oblivious to having lost them. I would even go so far as to say that this recipe was predestined, previously ordered by a higher power. There was no escape. One could not change the course of destiny. The dessert gods decided long ago that one day in my life I would be making a low carb mini brownie cheesecake for two. And that day was last week, when my husband was traveling and I just wanted a little bit of healthy dessert. I am happy to say that I have fulfilled the prophecy and lived up to the expectations of the dessert gods.

Really, from the moment I started making low carb mini cakes, this really was obvious. I mean, my full size Brownie cheesecake It is one of the most popular recipes here at All Day I Dream About Food. And why shouldn't it be? Dreamy creamy vanilla cheesecake on a thick, grain-rich thick brownie crust. Bam Done. The best dessert of all. Don't even try to find something to beat it because that, my friends, is impossible.

But you know, being the best dessert of all has its downfall. And that is temptation. When it's so tasty, when it competes with the best conventional desserts in flavor and richness, you risk wanting to stick your face in the pan and gobble up everything. This is a course of action that I generally don't recommend except in times of dire need and stress. Even then, I caution you to proceed with caution, as you will likely spend a lot of time with stomach pain. That amount of cream cheese and chocolate in one fell swoop would fall to even the most dedicated of dessert eaters.

Solution: Make the best miniature low carb dessert, just enough to share with a loved one. That way, if tough times hit you and eat your stress, you can actually stick your face in the pan and eat all at once, without the resulting tummy ache. Problem solved.

Cook's Notes: If you don't have mini cheesecake molds, you can cook it as various mini cheesecakes for muffins. Be sure to line them up with parchment liners for easy release. Or you can make them in a 4-inch pan and simply eat it directly from the pan. Grease it well!

Brownie Base

  1. Preheat oven to 325F and grease a 4-inch mini cheesecake pan. Wrap the bottom out of the pan in aluminum foil to prevent leakage.

  2. In a microwave-safe container, melt the butter. Whisk in cocoa powder, almond flour and sweetener until smooth.

  3. In a glass measuring cup, beat the egg until lightly beaten, then add approximately HALF the egg to the bowl (reserve the remaining egg to fill the mixture). Add the vanilla extract and beat until well combined. Add the chopped walnuts.

  4. Spread in a prepared mini cheesecake pan and smooth as best you can (I used my fingers). Bake 8 to 10 minutes, until it is around the sides but not the center. Remove and let cool while preparing the filling.

Cheesecake filling

  1. Reduce oven temperature to 300F.

  2. In a medium bowl, beat cream cheese with sweetener until well combined. Beat the remaining egg from the crust, sour cream, and vanilla extract until smooth. Bake 25 to 30 minutes, until edges are firm, but filling is slightly shaken in center.

  3. Remove and allow to cool, then refrigerate until ready, at least 2 hours. Run a sharp knife around the inside of the pan and loosen the sides.

Cheat Chocolate Ganache

  1. In a microwaveable bowl, melt the butter and chocolate over high heat in 30-second increments. Stir until smooth. Drizzle over chilled cheesecake just before serving.
