There are some mornings when a bowl of cereal or toast is not enough. For days like that you need a hearty baked breakfast.

For today's recipe, Victoria and I published our cheesy breakfast casserole with potato croquettes.

This simple egg casserole features some of our morning favorites. Eggs combined with cured ham, potato chips, bell peppers, onions, and cheddar cheese.

Special equipment needed:

Fortunately, this brown egg hash casserole is not complicated and you really don't need anything special to make it. Simply bake a plate large enough to hold the ingredients.

How to make a breakfast casserole with ham?

First things first, go ahead and cut the ham, onion and green peppers.

Also, grate the cheese, spray a baking dish with nonstick cooking spray, and preheat your oven to 350 degrees F.

Then, take a large mixing bowl and break twelve (12) eggs into the bowl. Pour a cup of milk and add the salt and pepper.

  • A quick word on how to add spices. You can always wait until the breakfast casserole with fries is ready before adding salt and pepper to taste. No one wants more seasoned food.

After that, in another large bowl, mix together the potato croquettes, cheddar cheese, green peppers, and onions.

  • When it comes to cheese, keep in mind that type and quality make the difference. For this baked egg casserole with ham, I recommend a Cabot Brand Vermont cheddar.

Then, once the hash browns and other ingredients are mixed, pour them into the prepared baking dish. Spread them out evenly.

Then pour the egg mixture into the baking dish. Make sure you pour it evenly over all the hash browns so they can absorb the beaten eggs.

Now, place the hashed brown breakfast pan (uncovered) in your preheated oven for about an hour.

  • You will know it is done when the center is no longer shaken and the edges and top are browned. Take a look at the photo above for reference.

Finally, remove the brown hash casserole out of the oven and let cool for about five (5) minutes before serving.

Ingredients

  • 12 large eggs

  • 1 cup whole milk

  • 1 teaspoon salt

  • 1/2 teaspoon of pepper

  • 24 ounces baked potatoes (frozen)

  • 16 ounces ham (diced)

  • 8 ounces cheddar cheese (about 2 grated cups)

  • 1 1/4 cups green bell pepper (about 1 large bell pepper, diced)

  • 1/2 cup white onion (about 1/2 medium onion)

Instructions

  • Preheat oven to 350 degrees and spray 9 x 13-inch baking pan with cooking spray. Set aside.

  • In a large bowl, mix the eggs, milk, salt, and pepper. Set aside.

  • In a separate large bowl, mix together the potato croquettes, ham, cheese, bell pepper, and onion. Transfer the hash brown mixture to the prepared baking sheet, then pour the egg mixture over the top. The egg mixture should be soaked on the plate. If necessary, use a spatula to spread the eggs and chips, so they are evenly distributed in the pan.

  • Bake uncovered for 50 to 60 minutes until center is firm and edges are brown.
