It should come as no surprise if you have read my blog for a while how much I love using cauliflower instead of rice. Don't get me wrong, I still love rice, but on days I will cut down on carbohydrates, or just add more nutritious vegetables in one meal, cauliflower rice is excellent. Making it in the food processor can be time consuming during the busy week, so I'm really excited for the Green Giant to come out with a new line of frozen rice vegetables. From freezer to stove, they only take 6 minutes to cook and come without any spices, so you can use them any way you want!
How to make Arroz Con Pollo with cauliflower rice
I partnered with the Green Giant to create a plate using one of their rice vegetables (they have several varieties) and immediately thought of arroz con pollo when I saw their cauliflower medley, which has cauliflower, carrots and peas – all the ingredients I usually add to my arroz. If you would like to make this Whole30 or Paleo, simply swap cauliflower medley for one of their other varieties, rice cauliflower, cauliflower & sweet potatoes or cauliflower & broccoli, which are also great for other recipes.
To make this taste equal to my traditional one arroz con pollo, I cooked the chicken with onions, garlic, tomatoes and spices until tender and then added veggies and olives. This turned out really tasteful, hope you enjoy!
Several ways to use red cauliflower:
- Swap them for any plate that requires rice
- Add them to rice dishes to increase the portions and add more vegetables
- Add them to stuffed peppers instead of rice
- Saute with garlic and oil for a simple side dish
- Great to add quick omelets

- 4 skinless, drumsticks on the bone
- 1/2 teaspoon kosher salt
- 1/3 cup chopped onion
- 1/3 cup chopped red pepper
- 2 cloves of garlic, chopped
- 2 tablespoons coriander, chopped
- 1 tablespoon olive oil
- 1/2 cup water
- 1 tablespoon tomato puree
- 1/2 teaspoon Sazon spices, store bought ore homemade
- 12 oz Bag Green Giant Riced Cauliflower Medley, Use Green Giant Riced Cauliflower for Whole30 / Paleo
- 2 tablespoons green olives, 1 tablespoon salt solution
Season chicken with 1/2 teaspoon salt, 1/4 teaspoon garlic powder, 1/4 teaspoon oregano and black pepper.
Heat a medium skillet over medium-high heat, add 1/2 teaspoon oil and saute the chicken until brown on all sides, approx. 5 minutes. Remove the chicken and set it aside. Wipe the skillet.
Heat the remaining 2 1/2 teaspoons of oil in the skillet, then add onions, peppers, garlic and cilantro. Sauté, stirred approx. 2 minutes. Add water, tomato puree, seasoning, 1/4 teaspoon salt, and return the chicken to the skillet. Cover and cook on medium-low heat for 30 minutes, turning halfway until chicken is tender and cooked through. Remove the chicken on a plate.
Add the Green Giant Riced Veggies, increase the heat to medium-high and stir well, turn the chicken back into the frying pan, add the olives with a little salt (liquid) from the olive container, cover and simmer until heated, approx. minutes.
Serving: 2 drums, 1 cup of veggies, calories: 470 kcal, carbohydrates: 19.5 g, protein: 52.5 g, fat: 19.5 g, saturated fat: 3.5 g, cholesterol: 218 mg, sodium: 978 mg, fiber: 5.5 g, sugar: 5g
