A couple of weeks ago I mentioned that we went a little overboard this fall when our family went to pick apples at a local orchard and farm. We came home with a bag of a mixed assortment of apples, that's around twenty pounds of apples to eat just three of us!

We have been happily making our way through some of the "apples they eat" as well as baking through other apples that are very suitable for baked desserts. But now that we're at the bottom of the bag, we made this amazing Bourbon Apple Butter. There are many apple butter recipes, but this Bourbon apple butter is really something special.

How is Bourbon apple butter made?

You can make this recipe with just about any variety of sweet apple, or a mix of several varieties, and it doesn't matter if it's an "eat" or "bake" apple.

Peeled and diced apples are simmered in a saucepan with freshly squeezed lemon juice, Kentucky Bourbon, water, brown sugar, apple liqueur (or apple juice), molasses, and a collection of spices including cinnamon , nutmeg, allspice and cloves. You can drop off the bourbon and apple liqueur if you prefer, but both really add wonderful complexity and rich, deep flavor to this apple butter recipe. (And alcohol cooks the way it cooks, if that worries you.)

Once the apples are soft and tender and the cooking fluids have been reduced, you will mix the mixture (an immersion blender like this works very well) until smooth and creamy.

Refresh your Bourbon apple butter, and spread it on your morning toast, on ice cream, as a condiment with pork tenderloin, on a hamburger, or just eat it with a spoon!

This Bourbon apple butter recipe uses approximately five pounds of apples, and produces approximately four cups of apple butter. It can also be beautifully preserved, so have something to eat and then the rest to enjoy over the next few months or as a gift.

Ingredients

5 pounds sweet apple, peeled, cored, and diced (1/4 inch cubes)

2 teaspoons of lemon juice

1 cup good quality Kentucky Bourbon (we use Jim Beam)

┬╝ cup of water

1 cup brown sugar, packaged

┬Ż cup apple liqueur (this is our favorite brand) or apple juice

2 tablespoons of molasses

2 teaspoons ground cinnamon

┬╝ teaspoon allspice

┬╝ teaspoon freshly ground nutmeg

┬╝ teaspoon ground cloves

┬Ż teaspoon of salt


Instructions

Cover the apples with lemon juice as you slice and place in a medium to large nonstick pot.

Add bourbon and water and bring to a boil, cover and simmer for 10 minutes.

Add brown sugar, apple liqueur, molasses, cinnamon, allspice, nutmeg, cloves, and salt.

Cover, bring to a boil, simmer with the lid on the side, letting out a little steam.

Cook for 30 minutes, stirring often for the last five to ten minutes as the liquid evaporates.

Puree in a blender or immersion blender until creamy.

You can use the water bath method.
