This Blueberry Buckle recipe was one of those recipes that you will find perfect for breakfast, snack or dessert. The stuffed blueberries are found with a coffee muffin-type cake and then topped with a cinnamon-butter streusel.
Blueberry muffins are my family's favorite dessert. I'm ashamed to admit that we LOVE Jiffy Mix Blueberry Muffins. Quite often we will prepare a couple of batches for breakfast. More often than not, we make them for the afternoon snack.
Kiddos will literally fight for who can enjoy the latter. Sometimes we even have to divide just one to keep everyone happy, ha ha.
I have to say that my family is not a fan of other blueberry desserts. They like their baked blueberries. Everyone loves our blueberry pancake bites, so I usually make them when I buy blueberries.
Last week, I got $ 1 each pints of blueberries at my local grocery store. I immediately thought about making this Blueberry Buckle recipe.
I have made this recipe over and over again and it has always been a success with my husband and all my children. I personally like it with my morning or even afternoon coffee. Since the consistency is that of a pastry, it is perfect for dipping in coffee.

All blueberries bake perfectly with the dough and some even explode. Buttery dough and cinnamon streusel really stand out on this delicious cake.
You will need some fresh or frozen blueberries, butter, egg, as well as some items found in your spice cabinet and pantry. I like that this recipe doesn't take long to be ready for the oven. The house smells wonderful when baked, so everyone is always ready for it to come out of the oven and be ready to devour.
INGREDIENTSCake: 2 cups flour 2 teaspoons baking powder 1/2 teaspoon salt 3/4 cup sugar 1/4 cup butter 1 egg 1 teaspoon vanilla 1/2 cup milk 6 oz fresh blueberriesSTREUSEL: 1/3 cup sugar 1/3 cup flour 1 teaspoon cinnamon 1/8 teaspoon salt 4 tablespoons butter
ADDRESSES To make streusel, combine the dry ingredients in a bowl. Cut butter into dry ingredients with a pastry blender or forks until crumbly. Set aside. Grease 8 × 8 ″ glass baking pan. Preheat oven to 375. Whisk together flour, baking powder, and salt. In large bowl, beat butter with sugar and egg until well blended. Gradually add dry ingredients and milk to this bowl, whisking constantly. Fold the blueberries into the batter until they are distributed. Pour / spread the dough on the prepared disk. Spread the coating evenly over the dough. Bake for 45-50 minutes, until toothpick inserted in center comes out clean. Let cool completely before cutting and serving.
