Oh hi everyone. I know it's Wednesday but I'm still recovering from the weekend, anyone else? If you follow me on Instagram, you know that Mr. Briar and I had a full three-day weekend action in San Francisco. It was fantastic and we ate and drank a LOT. Although I wish I could eat like this every day, unfortunately the scale told me "Yes, no". Honestly, as soon as I made my roasted coconut and almond butter, I wanted to put it in a smoothie. That material was made for smoothies. I started dreaming of a coconut smoothie, and blueberries came to mind. This is how this coconut and banana smoothie with blueberries was born. This smoothie is not as sweet as some of my others, so if you really want it sweeter you can add more fruit, or even a little honey or maple syrup. And if you don't have roasted coconut almond butter on hand, I think regular almond butter would work well, too. Here's the recovery from the weekend, and next weekend!
