During the summer, I love to pick fresh sweet corn from the farmers market. When the corn is at its peak, there is no need to cook it. The natural sweetness of corn is so good raw.

Black beans and corn are such a classic combination. The two are perfect paired together. Of course I had to add avocado to the salad because it's the best!

The salad dressing is full of flavor. I add earthy cumin, lime juice, olive oil and hot sauce. The spicy sauce adds a nice warmth to the salad. You can use a mild or extra spicy sauce.

I love serving the salad with tortilla chips!

This black bean, corn, and avocado salad is perfect for summer! The hot sauce and cumin add a nice touch of flavor and warmth to the salad.


For the salad

  • 2 cups of fresh corn kernels

  • 1 15-ounce can black beans, rinsed and drained

  • 15-20 cherry tomatoes, cut in half

  • 1/2 cup coriander, chopped

  • 1 small red onion, diced

  • 1 large or 2 medium avocado, diced

  • Salt and pepper to taste

For the dressing:

  • Juice of 2 limes

  • 2 tablespoons of olive oil

  • 1 1/2 teaspoon of cumin

  • 1-2 teaspoons hot sauce, or to taste

  • 1/2 teaspoon of sea salt

  • 1/4 teaspoon black pepper


    For the salad

    1. In a large bowl add the corn, black beans, tomatoes, coriander, onion, and avocado. Season with salt and pepper to taste.
    2. Mix to combine.
    3. Pour the dressing over the salad.
    4. Test and adjust seasonings if necessary. Serve and enjoy!

    For the dressing:

    1. In a small bowl, mix together the lemon juice, olive oil, cumin, hot sauce, salt, and pepper.
    2. Try and add more salt or lime juice to make it shine.
