Biryani is a typical dish of Indian gastronomy consisting of a plate of fried rice with different additional ingredients, in this case with vegetables. Biryani rice traditionally has a mixture of spices that give it all the flavor and aroma, and yogurt that provides a little creaminess. It can be served as a main dish or as a garnish for a curry dish or a lentil dal. The biryani rice with vegetables that I bring to RecetasGratis is also very delicious served with a yogurt sauce.

- 260 grams of biryani or basmati rice
- 1 small cauliflower
- 1 carrot
- 1 handful of green beans
- 1 onion
- 1 tomato
- 2 cloves of garlic
- ½ teaspoon grated fresh ginger
- 1 teaspoon of saffron
- 1 teaspoon salt
- ½ cup plain soy yogurt
- 2 tablespoons of oil
- ½ lemon (juice)
- ½ teaspoon of cumin
- 4 cloves
- ½ teaspoon cardamom
- 2¼ cups of water or vegetable broth
Steps to follow to make this recipe: 1
Heat a saucepan with oil and sauté the onion chopped until golden.
Add the minced garlic and ginger and sauté two more minutes.
Cut carrot sliced, diced tomato, green beans into smaller pieces and cut cauliflower into sprigs.
Add the spices from the biryani to the sauce, stir well, add the vegetables and sauté until they are well mixed with the spices.
Add the yogurt, tomato and juice lemon and continue cooking until the vegetables begin to soften.
Add the rice and the water or the vegetable stock and bring it to a boil. Lower the heat to medium-low, cover the pot and cook the Indian rice for 10 minutes. Turn off the heat and without removing the lid, let the rice rest for 5 minutes.
