We cut the ingredients into a similar size so that later they are made in a homogeneous way.
In a frying pan, fry the onion with butter or oil.
After a few seconds, add the carrot and beets and season with salt and pepper, fry for 2 minutes.
Add the broth and thyme, leave for 15 minutes so that the vegetables are tender.
We go to the blender and grind, or if you prefer with a manual mixer.
We serve the beet soup sprinkling cheese. It is recommended to serve this photo cold or at room temperature. This soup is not served hot, for this reason it is a very suitable soup for summer or spring.
