This roast meatloaf is prepared in about 5 minutes. My roast meatloaf recipe is so flavorful of barbecue sauce, bacon, and cheddar cheese that you can't resist having seconds. This easy recipe is Low Carb, Keto, Gluten Free, Grain Free, Sugar Free and Trim Healthy Mama Friendly.

I have made this delicious meatloaf with barbecue sauce for years. In fact, it's already on my blog with some tweaks in the form of mini meatballs, but making great barbecue meatballs is always easier. The combination of barbecue sauce, bacon, and cheddar cheese pairs well with just about anything.

Every time my children ask what we have for dinner and I say meatloaf, they respond with "the meatloaf with bacon and barbecue sauce?" And most of the time this is the one. It's just as good the next day, and it's known that leftovers are brought to school in a thermos.

How to make meatloaf for barbecue

Mix the ground beef of your choice (ground turkey or ground beef works well) with the seasonings.

Second step:

Put the seasoned meat in a large saucepan and drizzle a little sugar-free barbecue sauce on it.

Third step:

Top with grated cheddar cheese and cooked bacon.

Fourth step:

Bake the meatloaf until it reaches 160 degrees when verified with a meat thermometer.

What to serve with meatloaf for barbecue:

We typically serve this meatloaf with roasted vegetables, such as these baked roasted green beans or roasted Brussels sprouts. Another great alternative is to serve keto meatloaf with my broccoli salad, keto cauliflower puree, or bacon Caesar salad.

How to make meatloaf without using breadcrumbs?

It is very easy to make meatloaf without breadcrumbs or bread cubes. I add an egg as a binder and then just drain the cooking liquid before serving. Bread crumbs soak up that liquid, but you don't absolutely need to use them for a gluten-free meatloaf.

Where can I find BBQ sauce without sugar?

You can find sugar-free barbecue sauce in most grocery stores, but it's usually sweetened with sucralose. If you want a barbecue sauce without sucralose, you can make your own or order it online.

Barbecue meatloaf

This barbecue meatloaf comes together in about 5 minutes. It has such a flavor of barbecue sauce, bacon and cheddar cheese that you will not be able to resist having seconds.

Preparation time: 5 minutes.

Cooking time: 35 minutes.

Total time: 40 minutes

Course: dinner, main course.

Ingredients

Meatloaf ingredients:

  • 2 lb ground beef (I used turkey)

  • 1 cup shredded cheddar cheese

  • 1 tablespoon dried onion, chopped

  • 1 teaspoon minced garlic, dry

  • 1 teaspoonful of garlic powder

  • 1 teaspoon of chili powder

  • 1 teaspoon of ground mustard

  • 1 teaspoon salt

  • 2 oz of sugar-free BBQ sauce

  • 1 egg

Topping ingredients:

  • 2 oz of sugar-free BBQ sauce

  • 1/2 cup grated cheddar cheese

  • 1/2 cup cooked minced bacon (about 5 slices)

Instructions

  • Preheat oven to 400.

  • Combine all ingredients for meat and press to bottom of greased 9 x 13 pan. Brush barbecue sauce over top and sprinkle with cheese and bacon.

  • Bake for 30-40 minutes or up to 160 on a meat thermometer.
