I'm not sure if anyone has noticed my lack of new posts in the past two weeks. I have not felt well and cooking has been particularly difficult. But I am happy to report that there should be no more flaws in my posts. I'm back! It is the same idea as my recipe for bread stuffed with artichoke sauce that I published a few months ago and that has been very popular. Both recipes work great for party snacks or for a fun and easy dinner idea. Use roasted chicken to make this recipe even simpler.

Ingredients
- 3 cups cooked chicken, minced (I use roast chicken)
- 1 1/2 cups grated mozzarella cheese, divided
- 1/4 red onion, chopped
- 1/4 cup fresh coriander, chopped
- 3/4 cup barbecue sauce, divided
- 1 crispy baguette bread
Instructions
- In a large bowl, add the chicken, 1 1/4 cups mozzarella cheese, onion, coriander, and 1/2 cup barbecue sauce. Stir well to combine.
- Add a little more barbecue sauce if the mixture seems too dry.
- Cut the top edge of the loaf of bread and hollow it out 1 1/2 inches deep to create a well for the filling.
- Place the barbecue chicken mixture on the bread.
- Sprinkle with the remaining 1/4 cup mozzarella cheese. Drizzle with remaining barbecue sauce.
- Place on a baking sheet and bake at 325 degrees F for about 20 minutes or until heated through.
