During the fall, I saw apple-filled pancakes that were fried and drizzled with cinnamon and maple syrup… I thought it was a brilliant idea… fruit-filled pancakes! And my mind quickly went to bananas. And that's why I adore you with this incredible new recipe that you have to try with your children: banana pancake trays!

How to make pancakes

For starters, I just cut the banana in half. Then I cut each half into thirds lengthwise to make 12 slices of bananas. This can really be done with any fruit, but the banana and pancake mix goes perfectly!

For the dough, you can use just about any pancake dough you want. I used a simple box mix for this recipe.

The end product is a golden brown dough with crisp edges on the outside, hot bananas, melted in the mouth, and sweet bananas on the inside. They were so easy to dip into the dough and fry in a pan or griddle until they are perfectly hot and golden.

I love this brunch idea because it's a new take on pancakes and has the traditional banana and pancake flavors we all love for breakfast, packaged in a lovely new way.

Ingredients

  • 2 bananas
  • 3/4 cup pancake mix
  • 2/3 cup of water
  • Coconut oil for frying
  • Maple syrup for serving (optional)

Instructions

  • Cut the two bananas in half, and then cut each half in thirds lengthwise to make 12 slices of bananas.

  • In a medium bowl, prepare pancake batter according to package directions and mix well.

  • Using tongs, dip the banana slices into the pancake batter, then place them in a large greased skillet over medium heat. Cook the bananas 2-3 minutes per side, until golden brown.

  • Serve with your choice of maple syrup, jam, or melted chocolate.
