- 2 1/2 cups of flour with yeast
- 3/4 cup brown sugar
- 1 cup milk
- 1 egg
- 2 tablespoons of margarine
- 1 teaspoon of vanilla extract
- 2 ripe bananas
Combine milk, egg, margarine, vanilla, and bananas, and mix in a mixing jar.
Put the flour and sugar in a large bowl. Mix in the milk mixture.
Pour the mixture into a greased muffin tray.
Bake for 20-25 minutes at 180C.
- 1 12-hole muffin tin
If you fill the muffin tins to the brim, you will make 12 huge muffins. I haven't frozen them as they are great but a cream cheese frosting would work just fine or a little icing sugar. I've also added extras to these muffins in various combinations: sultanas, coconut, and chocolate chips.
