Banana muffins

Ingredients

  • 2 1/2 cups of flour with yeast
  • 3/4 cup brown sugar
  • 1 cup milk
  • 1 egg
  • 2 tablespoons of margarine
  • 1 teaspoon of vanilla extract
  • 2 ripe bananas

Method

  1. Combine milk, egg, margarine, vanilla, and bananas, and mix in a mixing jar.

  2. Put the flour and sugar in a large bowl. Mix in the milk mixture.

  3. Pour the mixture into a greased muffin tray.

  4. Bake for 20-25 minutes at 180C.

Equipment

  • 1 12-hole muffin tin

Notes

If you fill the muffin tins to the brim, you will make 12 huge muffins. I haven't frozen them as they are great but a cream cheese frosting would work just fine or a little icing sugar. I've also added extras to these muffins in various combinations: sultanas, coconut, and chocolate chips.
