- 1 1/4 cup plain flour
- 1/4 cup cornmeal
- 1 teaspoon of baking soda
- 1/2 teaspoon salt
- 1/2 cup of sugar
- 1 Teaspoon vanilla extract
- 1 cup of mashed banana
- 1/2 cup of macadamia oil
- 1 tablespoon of white vinegar
- 1/4 cup milk
Preheat oven to 165C (forced fan). Line a 20cm x 11cm bread pan.
Sift the flours, baking soda and salt, add sugar and mix well.
Combine the mashed banana, oil, milk, vinegar, and vanilla in a jar.
Combine with dry mix, until mixed.
Place in prepared pan and bake for about 40 minutes or until cooked through.
Ice as desired.

I've even used half a banana and half a kiwi fruit in this and it's still amazing. So easy and fast with no mixer or processor required.
