Banana cake without egg

  • 1 1/4 cup plain flour
  • 1/4 cup cornmeal
  • 1 teaspoon of baking soda
  • 1/2 teaspoon salt
  • 1/2 cup of sugar
  • 1 Teaspoon vanilla extract
  • 1 cup of mashed banana
  • 1/2 cup of macadamia oil
  • 1 tablespoon of white vinegar
  • 1/4 cup milk


  1. Preheat oven to 165C (forced fan). Line a 20cm x 11cm bread pan.

  2. Sift the flours, baking soda and salt, add sugar and mix well.

  3. Combine the mashed banana, oil, milk, vinegar, and vanilla in a jar.

  4. Combine with dry mix, until mixed.

  5. Place in prepared pan and bake for about 40 minutes or until cooked through.

  6. Ice as desired.


  • 1 11 cm x 21 cm bread pan


I've even used half a banana and half a kiwi fruit in this and it's still amazing. So easy and fast with no mixer or processor required.
