Is there anything better than the smell of freshly baked banana bread? I really can't think of anything that smells so good when baked. This is a banana bread recipe that I've been using for a long time, and I love it. I've adapted this recipe just a little over the years, including making this chocolate chip banana bread. What makes this recipe really special is that you combine bananas in two ways. First, beat two of the bananas with sugar to create a fluffy banana cream, so that the banana flavor spreads throughout the bread. Then you mash two of the bananas by hand so that tasty pieces of banana remain on the bread. Tasty wet banana bread with semi sweet chocolate chips melted throughout. This chocolate chip banana bread is a must!

Ingredients

  • 3/4 cup butter, melted and cooled

  • 4 4 very ripe bananas

  • 2 cups all-purpose flour plus one tablespoon

  • 1 1/2 teaspoons of baking soda

  • 1/2 teaspoon kosher salt

  • 1 cup of sugar

  • 2 eggs

  • 1 teaspoon of pure vanilla extract

  • 2 cups semi sweet chocolate chips

Instructions

  1. Preheat oven to 325 degrees and spray 9 × 5 bread pan with nonstick cooking spray.

  2. In a small bowl with a fork, mash two bananas together. The mixture should be thick.

  3. In a large bowl, combine 2 cups of flour, salt, and baking soda.

  4. In the bowl of a stand mixer, using the whisk attachment, mix together two bananas and sugar. Continue beating until the bananas and sugar are fluffy, 2-3 minutes.

  5. Switch to the popsicle accessory and add butter, eggs, mashed bananas, and vanilla. Mix until combined.

  6. Add dry ingredient and mix until combined.

  7. Using a bowl that had dry ingredients, combine the chocolate chips with 1 tablespoon of flour.

  8. Pour the chocolate chips into the batter and stir to combine.

  9. Bake at 325 degrees for about 1 hour and 15 minutes.
