Bananas, cinnamon, and walnuts combine in this overnight oatmeal to create a delicious protein-inspired banana bread-inspired breakfast.
It's been a while since I've created a delicious overnight oatmeal. The last time I made these tropical oats overnight with pineapple and kiwi. They were so delicious! Well lately I've been on a banana kick and thought, I should make some oatmeal banana bread overnight. I usually don't have nuts on my banana bread, but I love the crispness and extra flavor it gives this oatmeal!
I am one of those people who, if I start to itch, I can't stop itching. Therefore, it is better for me to have 3 meals full of protein instead of 3 meals and a couple of snacks. Fortunately, this breakfast has about 15 grams protein, depending on the milk and yogurt you use, and I always find that oatmeal is very abundant. So for me, this overnight banana bread oatmeal is a great way to start the day!

I love the convenience of night oatmeal. Prepare it at night and it will be ready in the morning. I don't know about you, but my mornings are pretty hectic trying to get 3 kids ready just to take my older son to school. I'm always the last to eat, and it almost always has to be super fast or easy to carry. Eating and driving is not my favorite, but it's thick enough that I don't have to worry about it falling off the spoon.
As for the flavor … the banana sweetens everything and makes it pleasant and fruity. Greek yogurt, chia, and milk make it thick and creamy. Cinnamon gives it a nice touch of spice, and walnuts give it a delicious crunch. If your thing is night oats, you don't want to miss this recipe!

Banana Bread Oatmeal Overnight
- 1 1/2 bananas
- 2/3 cup old fashioned oatmeal
- 1/2 cup nonfat Greek yogurt
- 1 1/2 tablespoons of chia seeds
- 2/3 cup milk (any variety)
- 1/2 teaspoon of cinnamon
- 2 tablespoons of chopped walnuts
Crush 1 banana with a fork in a large bowl. Add oats, yogurt, chia seeds, milk, and cinnamon. Stir well.
Pour the mixture into two half pint canning jars (1 cup). Cover and refrigerate overnight.
Cut half a banana into slices and cover each jar with some of the banana slices and 1 tablespoon of chopped walnuts, each. Enjoy!
