I used coconut sugar in this variation, and with the sweetness of bananas, these are addictive (it's a word) delicious!

How to Make Banana Bread Blondies with Walnut Streusel:

We collect our simple ingredients:

  • blanched almond flour
  • coconut flour
  • cinnamon
  • sodium bicarbonate
  • sea ​​salt
  • coconut sugar
  • ripe bananas
  • cashew (or almond butter)
  • egg
  • vanilla extract
  • chopped nuts

We begin by stirring the dry ingredients: flour, cinnamon, baking soda and sea salt. In a separate bowl, mix together the beaten egg, mashed bananas, cashew butter, coconut sugar, and vanilla extract.

Fold dry ingredients wet and stir until no dry bags remain. Now pour and smooth the dough into an 8×8 skillet lined with parchment paper.

Make the streusel: combine the chopped walnuts, additional coconut sugar, almond flour, cinnamon, a pinch of sea salt and butter or ghee. Pour over the mixture. Bake for 22-24 minutes (depending on the oven).

Once you get out of the oven, wait at least 30 minutes to cool before cutting into squares. If you are very impatient, go ahead and refrigerate to speed up the process!


These will keep well at room temperature for 2-3 days. I keep most of my baked goods in the freezer, then remove them individually so that they thaw at room temperature for 20 minutes before I enjoy them.

  • 2 medium ripe bananas (mashed)
  • 2 tablespoons of coconut sugar

  • 1.5 cups blanched almond flour
  • 2 tablespoons of coconut flour
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon of baking soda
  • 1/4 teaspoon of sea salt

For the Walnut Streusel:

  • 1 cup chopped walnuts
  • 3 tablespoons blanched almond flour
  • 2 tablespoons of coconut sugar
  • 2 teaspoons of cinnamon
  • 3 tablespoons of melted butter, coconut oil or butter


  1. Preheat oven to 350 degrees. Line an 8 × 8 square tray with parchment paper to slide it up the sides. Set aside.

  2. Prepare the blondies: In a large bowl, mix the beaten egg, cashew butter, banana puree, coconut sugar, and vanilla with an electric mixer.

  3. In a separate bowl, combine the dry ingredients: both flours, cinnamon, baking soda, sea salt. Stir the dry ingredients wet and mix until they are completely combined and there are no dry bags.

  4. Pour batter into prepared pan.

  5. Make the streusel: mix together the walnuts, almond flour, coconut sugar and cinnamon. Pour the oil, butter, or ghee on top. Stir to combine. Spoon over the blonde dough.

  6. Transfer to the oven and bake for 22-24 minutes, or until lightly browned and slightly firm. Remove from the oven and allow to cool for at least 30 minutes before cutting into squares and serving.
