Tomatoes cooked with pesto and parmesan are delicious grilled tomatoes garnished with pesto and grated parmesan. So easy to make, only 3 ingredients!
There are so many things I love in the summer, and summer tomatoes are at the top of the list. For this recipe, the sweeter the tomatoes, the better. I usually make my own pesto, but I had a jar of Delallo pesto that I didn't want to waste, and it was perfect.
How to bake tomatoes
Easy peas, just cut the tomatoes, garnish with a little pesto and grated parmesan and bake in the oven. It would be delicious with Asiago or mozzarella too. Serve with grilled chicken or fish, or even simple garlic and oil pasta.
Sometimes I slice the tomatoes into four thick slices instead, which is perfect on crisp bread. Keep in mind that it uses more pesto and cheese, so the calories change. You can also do something similar with chicken, tomatoes, pesto and cheese called Chicken Pesto Bake, so good!
Baked Tomatoes with Pesto and Parmesan

4 medium tomatoes, halved
4 teaspoons basil pesto, store bought or homemade
5 c. Grated Parmesan cheese
Preheat the oven to 400 ° F.
Arrange the tomatoes on a baking sheet and garnish each with 1/2 teaspoon pesto and 1/2 tablespoon parmesan.
Roast the tomatoes until the Parmesan is lightly browned and melted, about 18-20 minutes.
Remove from oven and serve immediately.
