Baked Loaded Potato Skins are a great party snack to make at home because you don't need a deep fryer for optimal results. Loaded baked potato skins are the ultimate party appetizer. Your guests won't be able to get enough of these crispy salty potato skins loaded with melted cheese, crumbled bacon, and plenty of sour cream!

Ingredients

  • 6 medium potatoes

  • 2 tablespoons of vegetable oil

  • 6 slices of bacon

  • 1 cup shredded cheddar cheese

  • 4 tablespoons butter, melted

  • 2 tablespoons chopped green onion

  • 8 ounces sour cream

  • Salt
  • Pepper

Instructions

  • Preheat oven to 400 degrees

  • Cover the potatoes with vegetable oil, sprinkle the exterior with salt and pierce the skin several times with a fork to allow steam to escape during cooking.

  • Place the potatoes in the oven and bake for 50 minutes, or until they are fully cooked and the rinds are crisp. Remove from oven and let stand until cool enough to handle.

  • While the potatoes are baking, cook the bacon in a skillet until crisp, drain from the fat, and cut into chunks.

  • Cut the potatoes in half lengthwise and remove the meat, leaving just enough for the potato skin to maintain its shape.

  • Brush the inside of the potato peels with melted butter and sprinkle with salt and pepper.

  • Turn the broiler on high and place the potato peels under the broiler until the meat and edges begin to creak. 3-5 minutes, turning as needed to avoid burns.

  • Remove from oven and top each with ~ 2 tablespoons cheese and ~ 1 tablespoon bacon. Put back under the grill until the cheese melts. 2-5 minutes, turning as necessary to avoid burns.

  • Top each potato skin with a tablespoon of sour cream and sprinkle with green onions.

  • Serve immediately
