In our family we have a joke on how to make "hearty snacks" for meetings. (Don't ask … we are a little weird!)

This loaded baked potato sauce definitely qualifies as a hearty and legitimate snack!

Forget about buying boring old sauces at the grocery store – this beauty can be made in minutes and is SO. Damned. Good.

Just a word of warning: once you've brought this baked potato sauce to a party, you may get requests to do it again. And again. And again…

Oh, and there will be NO leftovers!

  • Bacon
  • Sour cream
  • Strong cheddar cheese
  • Chives
  • Hot sauce (this is one of our favorites)

How to make an easy to load baked potato sauce

If your bacon is not yet cooked, prepare it according to the package directions. Drain or pat dry to remove fat, then let cool for at least ten minutes. If your bacon is already cooked and ready, skip to the next step.

TIP: Prepare the bacon ahead of time and when you are ready to make the sauce you don't have to wait for it to cool down. You can also use precooked bacon to save time.

Crumble the bacon in a medium bowl.

Add sour cream, cheese, chives, and hot sauce to the bowl. Mix until all ingredients are well incorporated.

TIP: Customize this recipe by adding YOUR favorite baked potato ingredients to the mix!

You can enjoy the baked potato sauce right away, or you can cover and refrigerate for at least an hour to let the flavors mix. Feel free to stay cold longer if necessary before serving.

Sprinkle with salt and freshly ground black pepper before serving.

Enjoy with: French fries, waffle fries, crostini, or fresh vegetables!

  • 8-10 slices of cooked bacon
  • 2 cups sour cream
  • 2 cups shredded minced cheddar cheese
  • 1/3 cups chopped chives
  • 2 teaspoons hot sauce


  1. Crumble the precooked (and chilled) bacon in a medium bowl.

  2. Add sour cream, cheese, chives, and hot sauce to the bowl and mix.

  3. Cover and refrigerate until ready to serve.

  4. Optional: sprinkle with salt and freshly ground black pepper before serving
