Homemade Tagalongs Without Baking {Peanut Butter Empanadas}: Tastes just like the real one without turning the oven on!

Like many girls, I was a Girl Scout growing up. I was in troop 91. I went to camp (I hated it), volunteered, earned badges, and sold cookies. My favorite memory of selling Girl Scout cookies was when my uncle, Tom, helped me sell cookies when I was at school in Auburn. Tom picked me up and took me to his fraternity house to set up a store. He made every Beta in the house buy me cookies. I sold a lot of cookies that year! 🙂

This is my favorite Girl Scout cookie. I have a great weakness for anything with peanut butter and chocolate. I grew up calling these peanut butter breaded cookies. It wasn't until I moved to Birmingham, after college, that I heard them called Tagalongs (and Samaoa's and Do-si-dos).

This homemade version is very, very similar to the real one, and you don't have to turn on the oven! Punctuation!! They are also much cheaper! Is it me or do they seem to have fewer cookies in the box every year? Save this recipe for when the peanut butter patties / Tagalongs stash is done.

Baked Homemade Tagalongs {Peanut Butter Empanadas}approximately 72 cookies(Printable recipe)

  • 3/4 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 1/4 teaspoon vanilla extract
  • 72 Nilla wafers
  • 1 package (24 oz) chocolate bonbon topping

Combine peanut butter, powdered sugar, and vanilla. Stir until well combined, coat each Nilla wader with about 1 teaspoon of peanut butter mixture. Refrigerate the peanut butter wafers for at least an hour.

Prepare the candy coating according to the package instructions. Top each peanut butter wafer with a layer of caramel. Shake off excess. Allow configure before serving.
