Many of us grew up on canned green beans, and I must say they are not my favorites. The texture is just different, and due to preservatives, even the flavor is off. I know there is a time and a place for canned green beans, but when I can make them fresh, this is how I prefer it.

Also, even the kids are happy to eat some freshly cooked green beans, so it's a victory if you ask me! I love the texture when you bite into roasted green beans. Also, adding the bacon takes it to a new level of good. You almost feel like you are eating something forbidden instead of healthy. The best part is that green beans are serious about almost every meal you can think of. Oh, and did I mention that they are super easy and you hardly have to do anything? Yes, and they are amazing!

How to make oven roasted green beans

Step One: Add a little avocado oil to a baking sheet.

Step Two: Add the green beans and top with oil, salt, and pepper.

Step 3: Roast the beans for 20 minutes or so until tender but crisp.

Step Four: When the oven-roasted green beans are done, sprinkle some crumbled bacon on top and serve.

Baked green bean variations

As with many of my recipes, you can make some adjustments to try some additional flavors. I could eat these roasted green beans just the way they are, but every now and then I like to change the flavors. These are some of our favorite combinations:

  • Garlic – Sprinkle a little minced garlic with the green beans for a touch of flavor. Plus, garlic goes well with everything, right?
  • Mushrooms – Add some mushrooms to the green bean mixture and stir. They will be roasted to perfection.
  • Parmesan – If you tolerate dairy, sprinkle a little Parmesan cheese on top during the last 5 minutes of cooking. Yum!
  • Lemon juice – Sprinkle some freshly squeezed lemon juice on the green beans after they have been baked. It gives it a spicy flavor that will excite everyone.

How to trim green beans

When you eat fresh green beans, your experience is best when you cut them first. There are two extremes for green beans. The first end becomes thin and withdraws, and you can eat it without worry. However, the other end is more knotty and has a tough texture. For best results, take several green beans and use a sharp knife to cut the knotty edge. You can cut both ends if you prefer too. After they are cut, rinse them, pat them dry, and you can cook them.

Can you eat slimy green beans?

As with any fresh product, fresh green beans will deteriorate. If you notice that some of the green beans look slimy, I would throw in the slimy ones. You can still eat the rest. Also, if you notice mold, it is an excellent indicator to throw them away too. Some people will peel the husk off the slimy green beans and still use them if the interior looks good. That's your decision, but I don't normally do that.

How long do cooked green beans last in the refrigerator?

Baked green beans will last in the refrigerator for about 3-5 days. Just keep them in an airtight container, and they should be good. If you want to plan your meals in advance, you can prepare them in advance for the days you are in a hurry. They are perfect for an easy lunch idea too.

How do oven roasted green beans reheat?

Reheating baked green beans is easy. You can toss them on a microwave-safe plate and heat them until they're hot. Or you can toss them in a pan with a little avocado oil. Just cook them until hot, so they stay firm and delicious. Finally, you can grill them again if you want. Simply roast at 350 degrees for about 10-12 minutes until hot.
