- 2 onions
- 1 tomato
- 200 grams of pumpkin or white potato
- 1 red or bell pepper
- 1 leek (ajoporro) chopped
- 4 white fish fillets
- 5 eggs
- 1 pinch of salt (to taste)
- 1 pinch of pepper (to taste)
- 1 jet of olive or canola oil
Steps to follow to make this recipe: 1
Use a baking sheet (preferably non-stick) and grease the surface with oil. Bake the chopped vegetables until browned, calculating about 30 minutes. When removing the tray from the oven, let the vegetables cool to room temperature.
Trick: You can also add a splash of olive oil over the vegetables, if you prefer.
Use a bowl to pour the eggs. Add salt and pepper to the mixture and stir slightly with a fork to beat them.
Add the vegetables precooked to the mixture of the beaten eggs and mix until integrating all the ingredients to proceed to cook the fish omelette in the oven.
Pour the mixture into a greased pan and place the fish fillets on the surface. Remember to wash the fillets beforehand and season them with parsley, garlic, a dash of lemon, pepper and salt. Bake the fish omelette at 180ºC or 200ºC, for 20 minutes. Remember that the temperature also depends on each oven. You will know that the recipe is ready when you see that the eggs are well curdled.
Trick: Preheat the oven 10 minutes before introducing the preparation and grease the mold.
