We can't believe it's already the last day of 2019. I mean, time flew by this year. As we reflect on past days and the things we accomplished, we cannot help but feel immense gratitude. To say that we are blessed is an understatement.

And for the support we have received during those days when things were more difficult. Sometimes being online, sharing and creating constantly is exhausting. We have big plans for the coming weeks and months for this blog as well, but getting there and achieving our goals has been a bit erratic. We still believe that we can achieve what we want if we set our mind to it, but we have accepted the fact that it may take longer than previously thought.

So, to celebrate the end of a successful year (and a decade), we shared a new favorite recipe for baked banana and peanut butter donuts.

Since getting a donut tray, baking donuts has been really easy and we prefer them to old cupcakes. Donuts are fun! Also, we bake them, we don't fry them, and we use a lot of healthy ingredients in the batter, making them somewhat healthier than your normal fried donut.

How to Make Baked Peanut Butter Banana Donuts

The entire recipe focuses on overripe bananas. We all have them from time to time, and I always find ways to use them (like this banana bread or banana blender pancakes). Mash the bananas and mix with a little peanut butter, maple syrup, and rice milk. Then add the dry ingredients: we use almond flour, oatmeal, toasted hazelnuts, plain flour, baking powder and salt. You can also use other types of nuts if you don't have roasted hazelnuts, such as almonds, pistachios, or pecans. Add the folder of soaked ground flaxseeds and combine with the rest of the ingredients. Then just put the dough on the baking sheet and put it in the preheated oven for baking! Once baked and cooled, feel free to decorate however you like – we chose a simple dark chocolate frosting and a pinch of salted peanuts!

Are these vegan donuts?

Yes! These banana and peanut butter donuts are vegan! There are no eggs, dairy or other animal derivatives in the ingredients and you can safely make these donuts if you are allergic or follow a plant-based diet. There is a flaxseed binder instead of egg and plant-based milk instead of dairy. We chose rice milk for this recipe, but other types of plant-based milk will work just as well!

Are these donuts gluten free?

No, these donuts are not gluten-free, since normal flour is used in the recipe.

How long will the donuts last?

You can store baked donuts in an airtight container on the counter or in the refrigerator for up to 4 days. So you can have them as a snack for the week and you can easily prepare them in advance! However, they are better consumed on days 1 and 2.

Baked Banana and Peanut Butter Donuts

Baked Banana and Peanut Butter Donuts are vegan, dark chocolate glazed, and made in just 30 minutes with simple, healthy ingredients.


Wet ingredients:

  • 3 tablespoons ground flaxseeds
  • 6 tablespoons of water
  • 2 ripe bananas
  • 3 tablespoons of peanut butter
  • 2 tablespoons of maple syrup
  • 1/2 cup of rice milk

Dry ingredients:

  • 1/2 cup of almond flour
  • 1/2 cup oatmeal
  • 1/2 cup toasted hazelnuts, finely chopped
  • 1 cup of flour
  • 1 teaspoon of baking powder
  • 1 pinch of salt


  • 1 cup dark chocolate chips
  • 3 teaspoons of salted peanuts


  1. Preheat oven to 160 ° C / 320 ° F. Lightly grease a baking donut with oil.
  2. Mix the ground flaxseed with water and soak for 5 minutes.
  3. Mash the bananas with a fork until smooth. Add peanut butter, maple syrup, and rice milk and mix well to combine.
  4. In a separate bowl, mix the dry ingredients: almond flour, oatmeal, chopped hazelnuts, flour, baking powder and salt.
  5. Add dry ingredients to wet ingredients. Fold the soaked flaxseeds and mix until combined (do not mix too much).
  6. Pour the dough into a dressing bag and fill the donut pan.
  7. Place in preheated oven and bake for 15 minutes at 160 ° C / 320 ° F. Once baked, remove from oven, allow to cool for a couple of minutes, then flip over a wire rack to cool and allow to cool completely.
  8. Once cooled, decorate your donuts with a dark chocolate frosting – melt the dark chocolate chips in a hot water bath. Once the chocolate is melted and smooth, dip the donuts into the chocolate and then place them back on the wire rack to cool. Sprinkle with chopped salted peanuts or other decorations of your choice and let cool until the chocolate becomes firm.
  9. Store in an airtight container for up to 4 days.
