Baconnaise is (in case it's not obvious from the recipe name) bacon-flavored mayonnaise, and will transform your favorite sandwich from "ho hum …" to "oh wow!"

Baconnaise is very easy to make in a blender, just like any homemade mayonnaise would be. But we swapped out a little bacon fat instead of some oil, giving this baconnaise a great flavor boost!

Once the creamy base is done, simply add a little finely chopped cooked bacon and some sauteed red onion for even more flavor and texture.

This homemade baconnaise is great for sandwiches (especially a classic BLT), but sometimes we also use it as a decadent sauce with sliced ​​vegetables or potato wedges.

Ingredients

  • 2 large egg yolks, beaten
  • 2 tablespoons of lemon juice
  • ¾ pound of American walnut smoked bacon (12 slices)
  • ½ cup light olive oil (not extra virgin)
  • 1 tablespoon of Dijon mustard
  • ¼ teaspoon of liquid smoke
  • ¼ teaspoon kosher salt
  • Pinch of freshly ground black pepper
  • 1 tablespoon minced red onion

Instructions

  1. Place the egg yolks and lemon juice in a small bowl and leave it at room temperature for 30 minutes while cooking the bacon. This step is necessary to "cook" the yolks with the acid of the lemon juice. The other option would be to use two encoded egg yolks (see How to encode an egg here) if you prefer that method.
  2. Cook the bacon until very crisp. Drain on paper towels and set aside. Save bacon fat.
  3. Pour the olive oil into a small bowl and add all the fat from the bacon. Place in the refrigerator to cool but not to solidify.
  4. Put the lemon yolk mixture in a blender and add mustard, liquid smoke, salt and pepper and with the engine running, very slowly drizzle the fat and chilled bacon oil. This process should take about two minutes, so pour very slowly.
  5. After two minutes, pour or scrape the mixture into a bowl and add the onion.
  6. Finely chop enough cooked crispy bacon to make ½ cup and add to mixture. Save the remaining bacon for other recipes.
  7. Stir the mixture and refrigerate for two hours and serve. It can be refrigerated for up to two weeks.
