Scallops are so meaty and delicious, and take just a few minutes to cook, making it a perfect quick dish for the week night. Making them in the fryer, the scallops come out perfectly juicy and tender on the inside, with crispy golden bacon on the outside in less than 10 minutes. I've been craving bacon-wrapped scallops forever and finally decided to try them in the fryer. Playing around with them in my kitchen, I discovered that partially cooking the bacon before wrapping the scallops gives you the best results for perfectly cooked scallops and crispy bacon.

Useful tips for cooking

  • For perfectly cooked scallops, be sure to dry them. Place them between paper towels to remove moisture.
  • Half a slice of bacon fits snugly around each scallop, you'll need a toothpick to secure it.
  • Always rotate food halfway when frying in the air. The heating element is at the top, so turning it will cook food evenly on both sides.

Reasons to fall in love with air frying:

  • The food comes out much crunchier than in my oven.
  • Preheat only three minutes, does not heat the kitchen.
  • It is safer and healthier than frying and does not smoke throughout the house.
  • The air fryer has now replaced my oven most days of the week and nights, whether it be preparing hard boiled eggs, garnishing, heating leftovers, or preparing dinner.

In fact, I love it so much that I partnered with Vremi to co-brand the Skinnytaste by Vremi Air Fryer (affiliate link) with brand enhancements I previously owned with a largest basketIntegrated, presets to make life a little easier, non-stick coating easy to clean PFOAand of course doing it Dishwasher safe.

For the crispy bacon without overcooking the scallops, I partially cook the bacon first before wrapping the scallops.

  • 16 large, clean and dry scallops with paper towels
  • 8 slices of bacon cut to the center
  • 16 toothpicks
  • olive oil spray
  • freshly ground black pepper, to taste
  • Preheat air fryer to 400F 3 minutes.

  • Place the bacon in the fryer to partially cook for 3 minutes, turning halfway. Remove and put on a paper towel to cool.

  • Eliminate the lateral muscles of the scallops. Dry scallops with paper towels to remove moisture.

  • Wrap each scallop in a slice of bacon and secure with a toothpick.

  • Drizzle the olive oil over the scallops and lightly season with black pepper.

  • Arrange the scallops in a single layer in the air fryer, cook in batches for 8 minutes, turning halfway until the scallop is tender and opaque and the bacon is well cooked. Serve hot.
