A super easy and tasty low carb chicken casserole topped with sticky melted cheddar cheese and chunks of bacon!

This is a great dinner Monday through Friday when you're short on time, but you want a good low carb home cooked meal! I use precooked chicken and frozen spinach to make things easier.

The flavor of this casserole comes from my Bacon Ranch dressing, which is super easy to make and tastes delicious!
I add cream cheese, grated cheddar cheese and more bacon. Even your most demanding eaters will gobble up this tasty Keto-friendly casserole!
How to Make a Bacon Chicken Casserole
Ingredients
1 1/2 pounds cooked / grated / diced cooked chicken breast
1 cup Bacon Ranch dressing (see my recipe here)
1/2 cup chicken broth (see my recipe here)
1/4 cup cream cheese, softened
5 slices of bacon, cooked and minced
1 1/2 cups grated cheddar cheese
9 ounces frozen spinach, thawed and drained well
Preparation
Preheat oven to 375F.
Add cream cheese to large mixing bowl and microwave soften for about 10 seconds until almost melted. Mix the bacon ranch dressing and chicken broth.
Add the chicken, spinach, half the crumbled bacon, and half the grated cheddar cheese and mix.
Pour mixture into a greased 9 "x 9" saucepan.
Then top with the remaining cheese.
Bake for 20 minutes on the center rack. Then bake an additional 5 minutes on the upper rack or until the cheese is golden and bubbly! Top with remaining crumbled bacon, allow to cool slightly, and serve.
Store leftovers in the refrigerator for a few days or freeze them.
Baking bacon in the oven on a rack is the easiest method you'll find! No stove splashes to clean!
