Bacon Egg & Cheese Biscuit Breakfast Casserole

With Easter coming this weekend, I was looking to have something simple to feed this big family of mine for breakfast. I thought about making our favorite breakfast braid because it's simple. Last weekend, I was thinking of a breakfast casserole that I could prepare ahead of time and throwing in the oven would be best.

I had some of our favorite breakfast ingredients and came up with this breakfast casserole that will be perfect for feeding our crew during the crazy Easter morning. If I prepare everything in advance, it will be very easy to do it the night before or the next morning.

My husband is a huge fan of cookies. His favorite dish I have prepared is our Biscuit and Gravy Casserole. Cookies are perfect for breakfast. The combination of bacon, eggs, cheese, onions, and peppers with cookies makes it a perfect dish.

If you are looking to prepare this breakfast casserole with bacon, egg and cheese, you can prepare all your meats and vegetables in advance. You could even mix everything and place it on your plate and refrigerate overnight (that's what I plan to do for Easter morning). So all it takes is baking and cutting into squares. I bet it would be great with ham or sausage too!

INGREDIENTS 4 tablespoons melted butter 10 eggs 1/2 cup milk 10 strips of cooked bacon, diced 1 green bell pepper, diced 1 medium onion, diced 8 ounces grated cheddar cheese 2 cans Grands Biscuits

ADDRESSES Preheat oven to 350. Cover 8×10 baking disc with melted butter. Beat the eggs and milk in a large bowl until combined. Separate the cookies and cut them into quarters. Add the cookies to the egg mixture and stir to coat. Add bacon, bell peppers, onion, and cheese to bowl and mix. Let stand for 10-15 minutes. Transfer the mixture to the prepared plate. Bake for 25 minutes. Cover the top with aluminum foil and bake for another 30 minutes until the eggs are well cooked.
