Bacon and Vegetable Slice

  • 5 eggs
  • 2 zucchini grated
  • 1 large grated carrot
  • 1 diced onion
  • 1 cup corn cob kernels
  • 250 g diced bacon slices
  • 1 cup tasty grated cheese
  • 1 cup plain flour
  • 1/3 cup olive oil
  • 1/2 cup grated Parmesan cheese


  1. Combine zucchini, carrot, cheese, and onion in large bowl.

  2. Add diced bacon and all remaining ingredients except Parmesan cheese. Mix well.

  3. Line a 20cm x 30cm baking dish with parchment paper.

  4. Place the mixture evenly in a baking dish and flatten slightly with the back of the spoon.

  5. Sprinkle with Parmesan cheese.

  6. Bake at 180 ° C until golden brown, about 1 hour.


This is great as a side dish or as a cold snack, even my daughters do this for the little ones!
