- 5 eggs
- 2 zucchini grated
- 1 large grated carrot
- 1 diced onion
- 1 cup corn cob kernels
- 250 g diced bacon slices
- 1 cup tasty grated cheese
- 1 cup plain flour
- 1/3 cup olive oil
- 1/2 cup grated Parmesan cheese
Combine zucchini, carrot, cheese, and onion in large bowl.
Add diced bacon and all remaining ingredients except Parmesan cheese. Mix well.
Line a 20cm x 30cm baking dish with parchment paper.
Place the mixture evenly in a baking dish and flatten slightly with the back of the spoon.
Sprinkle with Parmesan cheese.
Bake at 180 ° C until golden brown, about 1 hour.
This is great as a side dish or as a cold snack, even my daughters do this for the little ones!
