Are they as excited as I am? Easter is almost here! At home, Easter is about spending time with the family, eating, and searching for Easter eggs. I love that last part because after the kids find all those pretty eggs that they spent hours dying and painting, we adults take them to the kitchen and make amazing brunch recipes like stuffed eggs and my famous bacon and cheddar cheese egg salad . Easter is quite a casual affair for us. We usually spend the day sitting outside in the sun (weather permitting), and we watch the kids run around looking for Easter eggs. I love it, and since I don't want to be cooped up in the house while everyone else is out having fun, I do my best to make Easter brunch easy. However, that doesn't mean I don't like everything to look good, you know me! I have found some simple ways to set up a nice brunch table without missing the Easter egg hunt.

I usually use a 12 × 12 scrapbook paper sheet at each location and then put a Chinet Cut Crystal dinner plate, a salad plate, a variety of cutlery, and a Chinet® Classic White ™ napkin on each. This year, I'm changing things up a bit with these adorable paper flower napkin rings I made. I'm digging the look of the napkin ring into the Chinet cut glass cup along with a napkin and silverware. What you think? Do you like or think that I should wrap the cutlery in a napkin and use the napkin ring in the traditional way?

I also found these adorable glitter Easter eggs. They have a small hole at each end that is perfect for the toothpick flags I already have. I put the toothpick through the hole, added a few drops of hot glue inside to keep it in place and ta-da: instant place cards! I love them! It is a super easy place that looks great. The best part is that after everyone has finished eating, cleaning is a breeze. Chinet Cut Crystal is recyclable, so everything can go directly to the recycle bin, which means I can go outside to enjoy the sun with my family.

Speaking of simplifying things, if you're in charge of Easter brunch this year, you should include bacon and cheddar cheese egg salad on your menu. It's everything you like for breakfast: bacon, eggs, and a little cheese, all mixed, except you don't have to get up at 6 a.m. to start cooking, since it is served cold! You are starting to see why it is such an amazing recipe now, right? It is also very easy to do. Take a dozen hard-boiled eggs, peel them and cut them. Add mayonnaise, salt, a little mustard, diced bacon (cooked), and grated and diced cheddar cheese to the eggs. Mix everything gently so you don't break the eggs too much, and that's it! Your egg salad is ready and all you have to worry about is what to do with all the other colorful boiled eggs you need to use. I suggest Bacon Sriracha Avocado Stuffed Eggs or Shrimp Cocktail Stuffed Eggs. Both out of this world fine!

Bacon Cheddar Egg Salad is also a great low carb recipe for using the latest hard boiled Easter eggs. I make it for lunch the day after Easter when I'm trying to get back to normal with my low carb diet after all those cinnamon rolls and coconut cake. Mmm, coconut cake… I seriously can't wait for Easter to come!
