As a pregnant woman in May weather of 80 degrees, I think it's safe to say that summer is here and all my favorite summer flavors are too. This avocado and pineapple dressing is made with two of my favorite summer flavors: pineapple and avocado! DOLE pineapple juice, fresh herbs, and a ripe avocado combine to make this creamy dressing that's ideal for kale or as a dressing for broccoli salad. We launched our broccoli salad dressing and we really liked it!
I love how thick and creamy this dressing is with just the avocado and 1 tablespoon of olive oil. It was sweet from the pineapple juice, fresh from the herbs, and combined with the broccoli salad, it made a great alternative to the cabbage salad for a summer barbecue!

I know I've mentioned it many times, but we LOVE grilling. And now that it looks like summer, (even though school still lasts the entire month of May), we are fully roasted as much as possible!
And since it has been a perfect weather for grilling, we wanted to grill something to accompany our cabbage salad with broccoli and the delicious avocado and pineapple dressing. We decided to go for a tropical theme, and made some island chicken kabobs that have a sweet and salty pineapple juice frosting. Avocado and pineapple dressing
This avocado and pineapple dressing is made with DOLE pineapple juice, fresh herbs, and a ripe avocado, for a creamy dressing that's ideal for kale or broccoli salad!
- 3/4 cup canned pineapple juice DOLE
- 3 tablespoons chopped fresh basil leaves
- 2 tablespoons of fresh lemon juice
- 1 tablespoon fresh chives, chopped
- 1 tablespoon chopped fresh tarragon
- 1/4 teaspoon garlic, minced
- 1 tablespoon of extra virgin olive oil
- 1 avocado, chopped
- salt and black pepper, to taste
Combine pineapple juice, basil, lemon juice, chives, tarragon, garlic, oil, and avocado in a blender. Cover; mix until smooth. Season to taste with salt and pepper. Serve with kale or broccoli salad.
Chicken skewers with pineapple chunks DOLE
These Fresh DOLE Pineapple Chunks Island Chicken Skewers have a sweet and savory pineapple juice frosting and are served delicious on a bed of rice!
- 1 cup canned pineapple juice DOLE
- 2 tablespoons brown sugar, packaged
- 2 tablespoons of fresh lime juice
- 1/3 cup low sodium soy sauce
- 3 green onions, sliced
- 1 teaspoon minced garlic
- 1 tablespoon cornstarch
- 1 tablespoon cold water
- 12 wooden skewers soaked in water
- 1 pound boneless, skinless chicken breast, cut into 1-inch pieces
- 1/2 of a fresh pineapple, cut into 1-inch pieces
Combine pineapple juice, brown sugar, lime juice, soy sauce, garlic, and green onions in a small saucepan and simmer for 5 minutes. Beat cornstarch and COLD water. Slowly pour into sauce, whisking constantly until it boils and thickens. Divide the glaze in half. Set aside.
Pass the chicken and pineapple pieces on skewers, alternating each piece as you go.
Heat grill over medium heat and grease with cooking spray. Grill the skewers until the chicken is cooked through, about 5 minutes on each side, basting the skewers with half of the prepared glaze. Serve with the other half of the frosting as a dipping sauce or pour over one side of rice.
