This is one of my go-to salads this time of year. Asparagus and eggs are a match made in heaven, but not only for breakfast, it is also good for lunch! I always keep hard boiled eggs on hand in my fridge for use all week, so this salad came together in less than 10 minutes.

Asparagus eggs and bacon salad with Dijon Vinaigrette are the perfect light spring salad made with just a few simple ingredients – asparagus, hard boiled egg and bacon tossed with a Dijon vinaigrette.

  • 1 large hard boiled egg, peeled and sliced
  • 1 2/3 cups chopped asparagus
  • 2 slices cooked and crumbled middle cut bacon, check the labels for the whole30
  • 1/2 teaspoon Dijon mustard, check the label for the full 30
  • 1 teaspoon extra virgin olive oil
  • 1 tsp red wine vinegar
  • knife salt and pepper to taste
  • Burn a pot of boiled water, add the asparagus and cook for 2 to 3 minutes, until tender and firm. Drain and run under cold water to prevent it from boiling further. Set aside.

  • In a small bowl, mix Dijon, oil, vinegar and a pinch of salt and pepper.

  • Place the asparagus on a plate, top with eggs and bacon and drizzle vinaigrette over. Enjoy!
