Asparagus and caramelized onion tartare make a tasty starter for Easter! These tiny asparagus tartlets are SO good, made with a combination of caramelized onions, cheese and asparagus, they are ridiculously easy to make thanks to mini-phyllo pastries.

Asparagus and caramelized onion tartlets - a light, delicious spring!

Preheat oven to 350F degree. Line a large sheet of foil.

Cut each asparagus skewer halfway lengthwise and then into 1-inch pieces. Put in a small bowl of garlic, 1 teaspoon of olive oil, 1/8 teaspoon salt and pepper to taste. Toss to even layer.

Heat a large non-stick skillet over medium heat. Transfer the asparagus from the bowl to the pan and sauté until softened slightly and brown around the edges. Remove it from the heat and place it back in the bowl. Set aside.

Add another teaspoon of oil and the onions in the same skillet over medium heat. Throw to cover. Add a tablespoon of water, 1/8 teaspoon of salt and a sprinkle of sugar. Cook under stirring often for 5 minutes, or until the onions begin to turn brown and become translucent. Reduce heat to medium-low and continue to cook for another 5 minutes, or until onions are golden and caramelized. (If they brown too quickly, turn down the heat and add another splash of water.)

To assemble tartlets: In each shell, layer ½ teaspoon mozzarella cheese, then onion, asparagus pieces and top with more mozzarella and parmesan. Bake for 10 minutes or until the mussels are crispy and the cheese is melted. Garnish with chives and serve immediately.

  • 8 thick asparagus skewers, ends trimmed
  • 1 garlic clove, chopped
  • 2 tsp olive oil, split
  • 1/4 teaspoon kosher salt, divided
  • Freshly ground black pepper to taste
  • 1 medium yellow onion, halved and thinly sliced
  • Pinch granulated sugar
  • 30 mini phyllo pastries, 2 boxes, I used Athens
  • 2/3 cup shredded mozzarella cheese
  • 3 tablespoons shredded Parmesan cheese, I used Parmigiano Reggiano
  • Chopped fresh chives, optional for garnish
