- 1/2 shredded Chinese cabbage
- 1 grated carrot, peeled
- 1 red bell pepper, thinly sliced
- 1 cup trimmed bean sprouts
- 1/2 cup of grated mint
- 1/4 cup ranch salad dressing
Combine cabbage, carrot, bell pepper, bean sprouts, mint, and dressing in large bowl.
Mix until well combined.
I love this salad, so light and refreshing, full of flavor that the whole family will enjoy. I often add other Asian vegetables to this salad if I have them on hand.
