CREAMY FETTUCCINE

You may think I'm a food fanatic, but I love to cook. I love creating new dishes and mixing ingredients to see what I can think of. It may also sound a little crazy, but I love the aroma of many different foods. When certain smells fill my house, it is better than any air freshener.

I also don't wash my hands for a while after handling certain herbs because I love how my hands smell. My husband often catches me standing in the kitchen, smelling my hands. Crazy? Maybe a little, but the basil smells heavenly, especially combined with garlic. (Making pesto is a sensory overload for me and I love it!)

Do you have favorite food aromas?

There are so many food smells that I LOVE it. In fact, I think some of them have been turned into scented candles and it was a great idea. Herbs like basil, coriander and rosemary, all excellent and often seen in fragrances paired with something sweet and fruity. But how about the basil and garlic together? As I already mentioned, I could smell my hands all day after making pesto.

I also love when the aroma of roasted garlic fills my kitchen.

Garlic in general is a wonderful aroma, but when it's roasted in the oven and quickly fills the house with that aroma, I can't wait to try it. That's a missed opportunity for candlemakers right there. Although, I probably wouldn't buy it because I would get hungry just like a cookie scented candle.

Roasted garlic tastes as good as it smells. It is excellent to add to pasta, potato and chicken salads. Try using it as a dip or spread, or just spread some toast with a little olive oil drizzled on top. Another great way to use roasted garlic is in sauces, just like this fettuccine dish. It may be a simple sauce but it is full of great flavors.

Ingredients

  • 1 garlic bulb
  • 2 teaspoons of olive oil
  • 1 pound dry fettuccine
  • 1-2 tablespoons of olive oil
  • 1/2 small Vidalia onion
  • 2 cups thick whipped cream
  • 1 1/2 cups freshly grated Asiago cheese
  • Salt
  • 1 / 4-1 / 2 cup pine nuts
  • Parsley to decorate

Instructions

  1. Roasted garlic:
  2. Preheat oven to 400.
  3. Cut off the tips of the garlic cloves that are still in the bulb (leave the skin on) and place them in a square of aluminum foil that you can wrap it in. Drizzle a little olive oil in the garlic bulb. Wrap it in aluminum foil. Place the wrapped garlic on the baking sheet.
  4. Bake the garlic for 25-30 minutes, depending on the size of the bulb.
  5. Remove from the oven and set aside to cool.
  6. Pasta:
  7. Cook pasta according to package directions, drain water and set aside.
  8. In a medium saucepan, heat the oil over medium heat.
  9. Add the sliced ​​onion and sauté until golden.
  10. Remove all roasted garlic from the skin and add it to the pot. Stir and slowly start adding thick whipped cream, continue to stir slowly.
  11. Grate the Asiago cheese and add it to the cream once the cream is very hot. Keep stirring until the cheese melts.
  12. Add salt to taste.
  13. Add the pasta to the sauce and mix well.
  14. Top pasta with pine nuts and parsley when ready to serve.
