We prepare the ingredients to make our fresh artichoke omelette.
The first thing will be clean the artichokes. For this, we remove the stem and all the greener and harder leaves, thus leaving the most tender of the artichoke.
We cut the artichokes in half and then cut them very finely. We put a frying pan over medium heat with a good jet of oil and, as we cut the artichokes, we are throwing them into the frying pan, so that they do not turn black.
We let them cook over medium heat. When we have all cut, we put a little salt and let them make. Stir occasionally.
