Spinach artichoke dressing

Artichoke and spinach sauce is one of those easy sauce recipes that people seem to prefer at parties. As a hostess, it is one of my favorite dishes to prepare because it requires only a handful of ingredients and it is amazing. My mom used to make the most amazing artichoke sauce (recipe coming soon!) and this recipe is a game like that.

When I'm feeling generous, I love adding a little roasted garlic to this easy artichoke-spinach sauce recipe. And when I say a little bit, I'm really talking about two heads of garlic. If you're not familiar with roasted garlic, it's one of those ingredients that adds tremendous flavor and depth to your plate. Roasting the garlic really softens it and makes it almost sweet. If you don't want to go through the trouble, (it really is just a matter of sprinkling a little olive oil on top of the garlic heads and putting them in the oven; find my recipe here) Feel free to skip completely, or skip a few garlic cloves in olive oil and add them instead.

Some advices

  1. Softening the cream cheese in advance means I don't even have to take out a mixer to make the spinach and artichoke sauce.
  2. First I mix the cream cheese and mayonnaise to make a delicious creamy base and then I add the spinach, the artichoke hearts and the Parmesan cheese. I usually have a large container of Costco's Parmigiano Reggiano on hand and that's what I like to use the most.
  3. To save time (and dishes), go ahead and mix all the ingredients in the baking dish.

Artichoke and spinach sauce ingredients

The base of this sauce is a combination of cream cheese and mayonnaise. Many readers have substituted mayonnaise for Greek yogurt and they love it. Here's what you'll find in this easy artichoke and spinach sauce:

  • cream cheese
  • Mayonnaise
  • frozen spinach
  • Parmesan cheese or Parmigiano Reggiano
  • artichoke hearts in marinated rooms
  • lemon juice
  • fresh ground black pepper
  • roasted garlic

A dip with any other name …

Artichoke and spinach sauce is sometimes known as Florentine artichoke sauce due to the addition of spinach. It is the same thing that I am sharing with you here today. The spinach and artichoke sauce is cheesy, creamy, and totally delicious, no matter what the name is.

I love to include this simple dip on entertaining menus and when I prepare it for a crowd, I like to make a batch of my best chicken marinade and roast some chicken to go with it. It is a combination made in heaven! Dessert can be as simple as this Pina Colada Fluff or Key Lime Pie. Both are great options!

Tips for the BEST artichoke and spinach sauce

  • Deliver your defrosting time to defrost outside in the fridge. Once thawed, place it on a fine mesh screen and press hard to remove all of that extra liquid. The artichoke and spinach sauce is the worst!
  • Like spinach, artichoke hearts should be properly drained.
  • Let your cream cheese come to room temperature before mixing with the rest of the ingredients. It does so much easier to work with.
  • I used a spatula to stir everything but you could use a hand mixer or stand mixer to do it even easier.
  • The spinach and artichoke sauce can be made in advance. Just give it a few extra minutes in the oven and take out 15 minutes before baking.
  • Don't you have time to roast garlic? No problem. Skip the garlic completely, add two chopped cloves or two chopped and sauteed cloves.

Ingredients

  • 16 oz cream cheese
  • 1/2 cup mayonnaise
  • 10 oz frozen spinach, thawed, drained, squeezed out excess liquid
  • 1 1/2 cups Parmesan or Reggiano Parmesan
  • 21 oz. Marinated artichoke hearts, drained, coarsely chopped
  • 2 teaspoons of fresh lemon juice
  • 1 teaspoon freshly ground black pepper
  • 2 heads of roasted garlic

Instructions

  • Preheat oven to 375F.
  • Spray a 3-quart baking dish with nonstick spray.
  • In a large bowl, combine cream cheese and mayonnaise. Mix until well combined.
  • Add spinach, cheese, artichoke hearts, lemon juice, pepper, and roasted garlic. Stir until combined.
  • Place the mixture in a prepared baking dish.
  • Bake for 20 to 25 minutes or until golden and bubbly.
  • Serve with french fries, toasted baguette slices, or celery sticks.
