Aronia {Vegan} Oat Crumble Bars

These Aronia Oatmeal Crumble Bars are an easy-to-go vegan breakfast or dessert with a delicious aronia filling.

Have you heard of aronia berries? Black aronia berries are a natural superfood. Your skin offers natural protection against pests and fungi, so no chemicals are needed to grow these precious berries. As such, aronia berries are super healthy for you, as they are a natural antioxidant. We were stunned when we heard the many benefits of these little black berries and were eager to try them out as we were starting to wrestle with some spring blues.

We've been drinking small amounts of aronia juice every morning, only to add some rich nutrients after a long winter, and after a few weeks, we both feel much better: more motivated, less tired, and fatigued!

These Aronia Oatmeal Crumble Bars just get awesome! For dessert, they are quite low in sugar, so they bring aronia, oatmeal, and hazelnut flavors to the place. They are a little dense and chewy, but they contain a lot of energy and flavor in each bite. We recommend doing this as a snack to take on your spring walks. Enjoy them while sitting by a lake on your hike or to recharge your batteries while working in the garden.

Using the precast aronia filling Aa to make these Aronia oatmeal and crumble bars made the recipe really easy and quick to prepare, and fewer dishes were used, making cleaning easier. Also, did we mention the health benefits (read above)?

But if you don't have a prepared aronia filling, or can't find aronia berries, you can easily make a berry-based filling in minutes – mix 600 grams of frozen berries (of any kind) with 1/2 cup of sugar, 2 tablespoons of starch and juice of half a lemon. In a saucepan cook until the berry sauce thickens.

These Aronia Oatmeal Crumble Bars are an easy-to-go vegan breakfast or dessert with a delicious aronia filling.

Ingredients

  • 3 cups rolled oats
  • 3 cups spelled flour
  • 1/2 cup coconut sugar
  • 1/2 cup brown sugar
  • 1/2 cup ground roasted hazelnuts
  • 1 teaspoon of baking powder
  • pinch of salt
  • 1 1/2 cups vegan margarine (or bu
  • 2 cups of aronia filling

Instructions

  1. Preheat oven to 160 ° C / 320 ° F.
  2. In a large bowl, mix rolled oats, spelled flour, coconut sugar, brown sugar, toasted hazelnuts, baking powder, and salt.
  3. Melt the vegan butter and add it to the dry ingredients. Mix to combine until you get a dough that resembles thick breadcrumbs (a crumb).
  4. Line a small can with parchment paper. Transfer 2/3 of the crumb to the baking sheet. Press the dough toward the bottom and sides of the can to make a solid bottom.
  5. Place the baking pan in the preheated oven and bake 10 minutes at 160 ° C / 320 ° F.
  6. Remove the crumb from the oven, add the aronia filling (or mixed berry filling) and top with the remaining crumb mass, just sprinkle on top of the filling.
  7. Return to the oven and bake for an additional 25 minutes, or until the crumble is golden brown.
  8. Remove from oven and set aside to cool completely.
  9. Once cooled, cut the crumble into bars and serve.

Notes

Let the crumble bars cool for a longer period or overnight. The bars are even better the next day!
