Apple Crispy Yogurt Parfait {Vegan}

Apple Crunchy Yogurt Parfait is a delicious and healthy early fall breakfast, ready in just 15 minutes!

Apple season is officially underway! In addition to the umbrella season, warmer sweaters and lattes. Today's weather gives us the first clue next fall. Even the cat prefers to be indoors today.

This crispy apple yogurt parfait is perfect for when the summer air gets a little colder and the fall rains begin, and it couldn't be easier to prepare as it only takes 15 minutes total!

To make this recipe, start by dicing a couple of apples and combining them with lemon juice, sugar and cinnamon in a saucepan. We also add a little dark rum (or use bourbon). Then cook on the stove for a couple of minutes, just enough for the apples to soften and the sauce to thicken. As soon as it's done, remove the apples from the stove and add them to small jars. Then top with a few tablespoons of yogurt (dairy or plant-based) and crumble a bit of a muesli bar on top. And you are ready!

The muesli bar on top is really the cherry on top of this cake as it gives it depth of flavor and a chewy bite. We use a vegan hazelnut bar, but if you don't have muesli bars at home, you can also use granola (although we recommend you get the muesli bars!)

Ingredients

  • 2 apples
  • juice of half a lemon
  • 1 tablespoon of brown sugar
  • 1 teaspoon of cinnamon
  • 1 teaspoon of bourbon
  • 2 cups plain natural yogurt
  • 2 muesli bars (if possible, choose gluten-free hazelnut bars)

Instructions

  1. Cut apples in half, remove the core and seeds, and dice. Save a few slices to cover. Place the diced apples in a pot or skillet, add lemon juice, brown sugar, cinnamon to taste a teaspoon of bourbon or dark rum. Cook over medium heat until apples soften, about 5-10 minutes, stirring occasionally. Remove from stove and place stewed apples in bottom of 4 jars or glasses.
  2. To the jars, add plain yogurt on top of the stewed apples and crumble the muesli bars on top. Garnish with a couple of apple slices and serve.
