- 1 cup plain flour
- 1 cup raw sugar
- 1 cup rolled oats
- 1/2 cup coconut
- 1/2 cup of chopped macadamias
- 125 g of butter
- 2 tablespoons golden syrup
- 1/2 teaspoon of baking soda
- 2 tablespoons of boiling water
Combine flour, sugar, oatmeal, coconut, and macadamias in a large bowl.
Gently heat the butter and golden syrup in a small saucepan, stirring frequently, until the butter is melted.
Add the soda to the boiling water, then quickly add it to the warm butter mixture and stir well.
Pour the liquid into the dry ingredients in the bowl and mix well.
Place teaspoons of the mixture on well-spaced greased trays as the cookies will spread out during baking.
Bake at 150 ° C for about 20 minutes or until golden.
Let cool slightly on trays before moving onto cooling racks.
I think these are easier to handle if cooked on baking paper, as they are often difficult to slide on the cooling racks. Add extra golden syrup for a more chewy, flattering result.
