The recipe is easy and has red, white and blue colors. Fresh fruit and Cool-Whip topping keep the cake light, making it ideal for hot summer days. What are Poke cakes?

A push cake is simply a baked cake in which you make holes. After making the holes in the cake, the cake is filled with a liquid of some kind. In this case, we use strawberry jelly for our American flag cake. Of course, you can also put other delicious things in the holes. Think puddings, strawberry filling, chocolate, and even fruit puree.

Many cakes are covered with whipped topping, like this American flag cake. Many other poke cake recipes call for a traditional buttercream frosting. You might consider making a simple cheesecake frosting or even buying from the store to keep this cake simple. The whiter the coverage, the better. White makes the color of the berries stand out.

How to Make an American Flag Cake

The beginning of this recipe requires you to make a boxed cake mix. I guess you could also make a homemade white cake. But, I like to keep these cakes simple and less time consuming. Be sure to follow the instructions on the box. If your mix requires whole eggs, just use the whites. The yolk of the egg will give your cake a yellow tint and we want the cake to be as white as possible.

You will then pour the dough into a 9X13 greased and floured cake pan. While you can do it in a circular tray, it may not have the same visual appeal as a rectangular tray.

While the cake is baking, I sliced ā€‹ā€‹the strawberries lengthwise. Yes, you will also find me filling my mouth with all these wonderful berries.

After taking the cake out of the oven to cool, this is where you make the jelly. We use 1 cup of boiling water and beat until dissolved. Then add 1/2 cup of cold water, beat a little more.

You can let your kids help you with this part of the push cake. Using a fork, holes are made in the cake. This is simple and fun. I add quite a few holes. Pushing more allows the red jelly to be more visible.

Ah! Now pouring the jelly into the holes, this is fun! Watch the liquid disappear into the holes. Of course, the final product is even cooler.

After adding the jelly, I like to cool the cake. Cooling allows the gelatin to settle in the holes and settle.

I use Cool-Whip for this poke cake. Homemade whipped topping could also be used. I prefer stabilized Cool-Whip for summer parties, as it stays stabilized in warm weather for much longer than traditional whipped cream.

Now the blueberries are passing. You can channel your inner kiddo and place berries on the cake. Berries not only look delicious, but will also help the cake taste delicious.

Ingredients

  • 1 box of White Cake Mix plus box of ingredients
  • 1 cup boiling water
  • 1 3-oz box strawberry jelly mix
  • 1/2 cup cold water
  • 8 oz frozen thawed topping thawed
  • 1 pint of blueberries
  • 1 quarter strawberry

Instructions

  • Prepare the cake mix (following the instructions for egg whites only) in a 13 Ɨ 9 ā€cake pan.
  • Let cool for 20 minutes.
  • Mix the gelatin mixture with boiling water in a large cup.
  • Add cold water and mix well.
  • Push the top of your cake with a fork.
  • Slowly pour the gelatin mixture over the entire cake.
  • Place in the refrigerator for 30 minutes to finish cooling.
  • Spread the whipped topping evenly over the top of the cake.
  • Place about 5 rows of 7 blueberries each in the upper left corner of the cake.
  • Peel and cut the strawberries lengthwise.
  • Add rows of overlapping strawberries to create the red stripes for the cake.
  • Refrigerate the cake for another hour before serving.
