I was thinking it was time to post another amazing 30 minute post here on the blog! Sooooo … I give you this super easy Cajun chicken Alfredo pasta, super delicious! Remember when I shared this recipe for Creamy Chicken and Asparagus Pasta (which is also a 30 minute meal)?

Well, it was so well received that I knew I had to give it a spin. And the best thing about these pasta dishes (as well as EASY they are) is that you can throw away any type of vegetable. I only use what I have on hand! This cajun dish would be particularly tasty with some peppers and onions. However, I love broccoli, and that's what I had on hand, and it was completely delicious!

Ingredients

  • 8 ounces farfalle pasta (or your favorite type)

  • 2 butter spoons

  • 3 garlic cloves, minced

  • 1 pound boneless, skinless chicken breasts (about 2 breasts), cut into small pieces

  • 2 teaspoons of Cajun seasoning or more to taste

  • 4 ounces cream cheese, softened and cut into small pieces

  • 1 cup milk

  • 3/4 cup freshly grated Parmesan cheese

  • 1/2 teaspoon freshly ground black pepper

  • 1/2 teaspoon of salt, more to taste, if necessary

  • Fresh vegetables, if desired, see note

Instructions

  • Cook pasta according to package directions until al dente. Drain, rinse with cold water and set aside.
  • In a large saucepan or saucepan, melt butter over medium heat. Add garlic and cook for about 2 minutes, stirring constantly.
  • Add chicken pieces (and desired vegetables *) and season with Cajun seasoning. Cook for 3-4 minutes, until the chicken is almost cooked.
  • Add milk and cream cheese, stirring well, until cream cheese melts and sauce is smooth, 2-3 minutes.
  • Add the pasta, Parmesan cheese, salt, and pepper. Serve immediately.

Notes

Vegetables: I often like to add vegetables to the pasta that I need to use from my refrigerator. A more authentic cajun dish would include sliced ​​peppers. Other good additions would be spinach, broccoli, asparagus, or mushrooms. Otherwise, this is the perfect pasta to serve with a side of roasted vegetables.
