A Cobb Classic Salad Update and Recipe

Hello friends! How are you? I can't believe it's been over 3 weeks since we moved out of Washington state and since my last post!

I thought about showing up and telling you what I've been doing and catching up on what's to come. We left Washington 3 weeks ago and it took us 5 1/2 days to drive from Washington to San Antonio, where we have been at my parents' house visiting them and the rest of the family.

The trip… well, it was pretty good! 4 kids and 2 adults packed, literally packed, in a minivan didn't seem like a fun time, but overall I'm glad I did instead of taking a separate car. The children were able to experience a real road trip. We drive through Oregon, Idaho, Utah, Colorado, New Mexico and finally Texas!

We took two easier days of driving to visit Arches National Park in Utah and Mesa Verde National Park in Cortez, Colorado. It was definitely worth it because it gave us time to stretch our legs and see a bit of the beautiful countryside.

The trip was uneventful, except for having to stop in the emergency room on day two to get steroids for persistent cough (similar to asthma) from my 3-year-old children.

So what happened after arriving in San Antonio? Well, get plenty of rest, swim, eat (eat a lot), visit family, etc. I really thought that I could do a blog job on my parents' computer had been acting wrong, so it turned out to be impossible. The funny thing is that yesterday they fixed the computer, so I was finally able to get a post! Great moment (note sarcasm).

On Monday we will finally move into our new home in Louisiana, which I am very excited about. We signed the lease site unseen, so I am very excited to see it. I eventually got some photos, so I have an idea of ​​what it looks like, but many of them will be a surprise. I'm ready for the next adventure and back to work!
