As I read all those avocado recipes, my wheels turned and this occurred to me.

I took advantage of the natural, plant-based healthy fats found in avocado, skipped any butter in the dough, and added just two tablespoons of oil to this large slab of pizza bread.

Between the condiments and the cheese, the avocado and the sour cream, it is dense, cheesy and full of salty flavor.

Avocado, sour cream, buttermilk, and cheese (use vegan ingredients if desired) keep bread soft, chewy, and very moist.

It is so wet that when I put it on the cooling rack after baking, it released a few tablespoons of water on the counter. That's a little wet bread. If you are looking thin and crisp, dry, light and airy, it is not that.

Whole wheat flour adds chewyness, texture, and a more earthy, nutty flavor that comes with whole wheat flour.

I love the taste and health benefits of whole wheat flour, but it can be difficult to grow properly because it has less gluten. However, it is perfect in the dough that is fine if it is kept flatter and denser, such as whole wheat pizza dough, honey whole wheat skillet bread or this bread.

30-Minute Avocado Skillet Pizza Bread with Cheese (Whole Wheat & Vegan)

This pizza bread is what you would get if you crossed avocado cheese bread with pizza. It is made with whole wheat flour, without kneading and without problems, can be kept vegan and is ready in just 30 minutes. If you can't decide whether you want bread or pizza, this moist, soft, dense, cheesy pizza bread is the perfect solution.

Ingredients:

2 medium ripe avocados, pureed (I used Hass) 1 1/4 cups buttermilk * (see vegan tip if you don't keep it) 1/4 cup sour cream or thick Greek yogurt * 2 tablespoons canola or vegetable oil 2 cups grated cheese (8-ounce package) divided * 1 cup whole wheat flour 2 tablespoons all-purpose seasoning mix, or to taste (Mrs. Dash varieties, TJ's 21 Salute, Lawry Seasoning Salt , grilled seasoning, etc.) 2 teaspoons of baking soda, optional and to taste (remember that buttermilk is salty, cheese has salt, and many seasoning mixes contain salt)

* To keep vegan: use vegan buttermilk. Combine 1 1/4 cups non-dairy milk (or regular milk if vegan considerations aren't important and you just don't have buttermilk on hand) with 2 tablespoons white vinegar or lemon juice, let sit for 10 minutes, stir, and use. Use vegan cream / yogurt and vegan cheese to keep the vegan recipe.

Addresses:

  1. Preheat oven to 400F. Spray a 10 1/4 inch enameled cast iron skillet (or 10-12 inch diameter skillet) with cooking spray, grease a seasoned cast iron skillet, or prepare an oven safe skillet; set aside. Bread can probably be made in a 9-by-13-inch drizzled pan, though I haven't tried it.
  2. In a large bowl, combine the first four ingredients and mix to mix.
  3. Add approximately 6 ounces of cheese and double to incorporate.
  4. Add remaining ingredients and fold to incorporate. The dough will be lumpy, irregular, thick and not smooth at all; do not over mix or try to soften it.
  5. Turn the dough into a pan. Bake at 400F for 15 minutes.
  6. Remove the pan from the oven and sprinkle the remaining cheese evenly over the top.
  7. Lower oven temperature to 350 ° F, return skillet to oven and bake for 15 minutes, or bread will be cooked and cheese golden.
  8. Optionally, place skillet under broiler for 1 to 2 minutes to brown cheese further. Be very careful if you use the grill to avoid burning it. It can burn within 1 minute; stay there and watch it all the time. I keep the oven door ajar.
  9. Using a large spatula, slide or push the bread out of the pan and onto a wire rack to cool. Do not store it in the pan because it will continue to cook from the heat of drag. Slice and serve after it has cooled sufficiently. Serve alone, with guacamole, salsa, sour cream, or your favorite salsa. Bread will be airtight for up to 4 days or in the freezer for up to 3 months.
