It is at this time of year when I start to put away my winter clothes and take out the shorts and T-shirts that have been saved for the winter. Don't get me wrong, it's not like I'm shoveling snow here in Sacramento, but it's cold and this year has been unusually cold and rainy.
Spring is definitely here. And although we have a few more rainy days in the forecast, so far we have been blessed with some beautiful sunny days. The children spend most of their afternoons playing outside before I call them to dinner and we get ready to go swimming.
I really love this time of year. School is ending. We are starting to plan our summer trips. Life seems easier in the spring.

I love the meals that are all in one. I don't have to worry about cooking a separate vegetable with this easy dinner. Everything is incorporated!
If you're not familiar with any of the ingredients in the recipe below, just visit the Asian aisle at your local store. You can find everything you need there. A couple of ingredients you don't want to substitute are roasted sesame oil and oyster sauce. Both add so much flavor to the dish that you would definitely miss it.
This dinner takes about 20 minutes from start to finish, so be sure to prepare the rice before you start cooking.
My kids love sesame seeds, so I'm going a little crazy with them, as you can see. I also like to garnish with more sliced green onions if I have something to spare.

- 2 tablespoons of vegetable oil
- 1 pound boneless, skinless chicken thighs, cut into strips
- 1 bunch of broccoli cut into florets
- 3 green onions, thinly sliced
- 1 tablespoon grated ginger
- 3 garlic cloves, minced
- 2 tablespoons low sodium soy sauce
- 2 tablespoons of rice vinegar
- 1 teaspoon toasted sesame oil
- 2 tablespoons of oyster sauce
- 1 tablespoon cornstarch
- 1/4 cup of water
- serve with cooked white or brown rice
- In a medium bowl, mix soy sauce, rice vinegar, toasted sesame oil, oyster sauce, and cornstarch. Set aside.
- Add oil to a wok or large skillet over high heat.
- Add chicken and cook until golden brown, about 8 to 10 minutes.
- Add broccoli, green onions, ginger, and garlic and cook for another 3 minutes, stirring frequently.
- Pour the sesame oil mixture over the top and stir.
- Add water and stir until mixture thickens, about one minute.
- Serve over rice.
